Nigella shares her favourite menu: Oven-cooked chicken shawarma,Salmon, avocado, watercress and pumpkin seed salad and Chocolate chip cookie dough pots.
For the occasions that call for something a bit different, there is Nigella’s chicken shawarma with an array of spices, sauces and flatbreads. Inspired by a spit-roasted Lebanese kebab, Nigella’s oven-roasted version is fun, tasty and prefect for feeding a crowd.
There has to be chocolate in the balance and Nigella shares two of her latest treats – a glossy liquorice and blackcurrant chocolate cake and her chocolate chip cookie dough pots – freshly baked pots of gooey cookie dough served with a dollop of ice cream or creme fraiche.
1. Oven-cooked chicken shawarma
Here, I’ve served it modestly, on a pile of shredded iceberg, with some warmed pitta, lemon wedges and a tahini sauce. When I make shawarma for groups of friends, or for a family lunch or supper, I slice up some fresh tomatoes sprinkled with mint, and cut some cucumbers into wedged slices, and macerate some red onions, cut into half-moons, with red wine vinegar or lime – in which case it will serve up to 10 people.
2. Salmon, avocado, watercress and pumpkin seed salad
This is a regular lunch or supper at casa mia, as anyone who follows me on Twitter or Instagram will recognise. I sometimes poach the salmon and keep it in the fridge , just so that I can make it even faster when the need hits. It’s quick work anyway, so this is more of an aside than a piece of advice.
3. Chocolate chip cookie dough pots
My children love a chocolate chip cookie so gooey on the inside that I can’t really make the outside firm enough to let the cookies keep integrity of form. As a result cookie dough you bake in a little dish, and then eat with a spoon, dolloped with ice cream or crème fraîche as desired.
